Almond-Goji Pulp Steel Cut Baked Oatmeal

I eat microwaved and stovetop oatmeal all the time, but there’s just something about baked oatmeal that feels extra fancy. In actuality though, baked oatmeal is just as simple and easy to make, so it’s special without the fuss! This recipe was created as a way to use up the leftover pulp from making almond-goji milk (you could also make muffins!), but rather than being snuck in and hidden, the pulp is really the star of the dish. The sweetness of the goji berries are accentuated by a touch of vanilla and honey, while the crunchy almonds give the oatmeal a richness that no joke tastes like butter. So if you’re in the mood for a warm, cozy, spoonable breakfast or brunch, get baking!


Almond-Goji Pulp Steel Cut Baked Oatmeal

Ingredients

  • 1/2 cup quick cook steel cut oatmeal
  • 1/2 cup packed almond-goji pulp
  • 1 tbsp ground flax
  • 1 tsp chia seeds
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 1 cup milk
  • 1 tbsp honey
  • 1 teaspoon vanilla extract

Directions

  1. Combine oatmeal through salt in a bowl.
  2. Combine milk through vanilla in a separate bowl.
  3. Mix the wet ingredients into the dry and let the mixture sit for 5 minutes.
  4. Bake in a standard 4 ½” x 8 ½” loaf pan at 350 °F for 30 min.
