Who was raised by trolls and is best friends with a reindeer? Yup that’s Kristoff. Although he doesn’t initially come off as a people person, this fixer-upper soon shows his sensitive and sweet side as he joins Anna on a journey to bring back summer. Likewise, today’s recipe also has a touch of sweetness combined with a fragrant coconut flavor. But don’t be fooled! These “ice cubes” are actually steamed rice squares great for snacking or as a palate cleanser at the end of a meal. Pure white and silky smooth, these “ice cubes” have the royal ice-supplier seal of approval.
Kristoff’s (r)Ice Cubes
Makes one 4 ½” x 8 ½” loaf
Ingredients
- 1 can low-fat coconut milk (400 mL)
- 200 g rice flour
- ¼ cup sugar
- 2 tsp baking powder
Directions
- Combine rice flour, sugar, and baking powder. Add the coconut milk and whisk together till fully combined.
- Pour batter into a 4 ½” x 8 ½” loaf pan and steam for 30 minutes. Allow to cool to room temperature before slicing or chill in the refrigerator for a firmer texture.
